Fluffy Pancakes
These fluffy pancakes are light and fluffy and great for a weekend brunch – basically I made a huge pile of messy, fruity pancakes and wanted to share them with you…so here goes.
Fluffy Pancakes - ingredients You will need:

The pancakes

  • 135g wholemeal flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp caster sugar
  • 130ml milk
  • 1 large egg, lightly beaten
  • 2 tbsp melted butter (allowed to cool slightly)
The compote
  • A handful of frozen fruit (a berry kind of mix is great)
  • 2 tbsp light brown sugar

 Let's get making:

Step one: Sift the flour, baking powder, salt and caster sugar into a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.

Step two: Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.

Step three: Heat a non stick frying pan and pour around a ladle full of mixture into the pan. Wait until the first side is lovely and golden, and then flip to cook the other side.

Step four: Pile up your pancakes and add toppings of your choice! YUM.

Compote: Take your fruit and sugar, place in a small saucepan on a low heat stir until the fruit is super soft when you can start to almost mash it against the spoon.
